Sort of Swedish Meatballs







This is my take on Swedish Meatballs.  I love fresh Dill so I added it to this recipe. I also added about a quarter of a pound of minced fresh button mushrooms.  I hope you enjoy the recipe.  Feel free to change it for your own tastes. This makes about 2 ½ dozen delicious meatballs with gravy. Serve with cooked egg noodles. Yummy!

Cauliflower Soup with Sausage and Cheddar




                This is a wonderful soup that can be made thin or thick.  Or maybe in between.  I wanted the cauliflower to be chunky so I did not puree. If you want a smooth thick soup, then once the cauliflower is tender remove it and puree with a small amount of liquid.  REMEMBER that you should only puree about a cup at a time if you are using a blender.  This keeps the extremely hot liquid from splashing onto you!  You can also use a stick blender that goes directly into the pot.  You can only puree part of the cauliflower, if you desire, too.   I served this with a lovely salad and a slice of toasted Oatmeal Walnut bread.  It was a wonderful dinner for a chilly evening.

Warm Roasted Winter Vegetable Salad with Garlic and Orange Dressing





                What happens when you join a CSA?  Well, you get lots of delicious vegetables.  And in my case, these are delivered to me with a text message, in case I am not there.  So the items that were in my delivery this week included kohlrabi, turnips with greens, onions, cabbage, cauliflower, oranges, key limes, English pea shoots, and homemade apple butter.  Can you say “YUM”?

                First of all, I did not know what the shoots were and had to ask.  Chris, a friend, and I had all tasted them and could not identify what they were, other than wonderful and crispy.  Since I tend to crave green, crispy salads this time of year, I decided to roast some of the root vegetables and cauliflower.  Served warm on a bed of pea shoots really hit the spot.

     It is New Year's Eve, 2014 and I just wanted to wish everyone a safe and happy New Year's Eve and a wonderful and joyous 2015.

     The photo is of my crazy rose bush.  It is a yellow rose but the Red Blaze that the yellow rose was spliced to decided to produce. This is a pretty good analogy of 2014, for me.  It did not go as planned but it turned out beautifully.  There was a lot of surprises, some were lovely and others came with thorns. 

     As I prepare for 2015, I keep thinking of all you who take the time to visit my website.  Thank you!  I should be graduating this spring with the first of my degrees and so hopefully, I will have time to post new and delicious food and recipes for a few months, before I dive back into my studies.

     Again, I want to thank each of you for following me and wish each of you a joyous and blessed New Year!

Banana Pudding on Steriods

This was originally posted on September 2, 2013, but I am making it this afternoon, so I thought it might be nice to re-post.  This time I am making it with Vanilla Wafers instead of cake.  I use the least expensive cookies that I can find because those seem to be more porous and soak up the pudding.
