Cauliflower Au Gratin

This recipe is for all of my friends who are eating diets with lower carbohydrates. It has some flour and milk but the rest of the recipe is pretty much free of  carbs. There are about 86 carbs in the entire dish, if you use 2% milk and a large head of cauliflower. You could use cream in place of milk to lower the carbs, even more. Plus this makes 6 to 8 vegetable servings, depending on the size of the cauliflower head. Even if you are not lowering your carbohydrate intact, you will probably enjoy this recipe.  It is a good way to those family members who will not eat cauliflower to try it.
Preheat the oven to 325 degrees.

1 head of Cauliflower, green leaves removed and washed
1 cup of Shredded Cheese, divided
2 Tablespoons of Butter
2 Tablespoons of Flour
2 Cups of Milk
1/2 teaspoon of Nutmeg
Salt and Pepper

Place cauliflower in a large stock pot an fill half way with water.  Add salt.  Bring to a boil and reduce heat.  Cook until the cauliflower is tender when pierced with a fork.  Remove from water and drain in a colander.  Once most of the water is removed.  Place cauliflower in a 13" X 9" oven proof pan and then break the cauliflower into large florets. Sprinkle with salt and pepper and then top with 1/4 cup of cheese and set aside.
Heat butter and flour in a saucepan over medium-low heat and stir until combined.  Add milk and whisk until all of the lumps are gone.  Continue to whisk until the sauce thickens and reduces by one half.  Remove from heat.  Add 1/2 cup of cheese,  nutmeg, salt, and pepper. Mix until cheese melts.  Pour over the cauliflower in the pan and top with remaining 1/4 cup of cheese.  Bake at 325 degrees until the everything is thick and bubbly, about 25 minutes.  Let cool before serving.
