Roasted Vegetables

These vegetables go beautifully with the roasted chicken for Easter. This is so easy to cook and can be made ahead of the roasted chicken.  Then once you have finished the chicken, put these back into the hot oven to reheat. Preheat the oven to 350 degrees.

1 Red Bell Pepper
1 Green Bell Pepper
1 Sweet Onion
Sepay Groves Olive Oil
Salt and Pepper

Line a baking sheet with foil. 
Slice the vegetables about 1/4 inch thick.  Place on the foil lined baking sheet.  Sprinkle with olive oil, salt, and pepper. Toss and then spread flat on the sheet.  Bake at 350 degrees 35 to 45 minutes or until the vegetables are tender.
