Crumb Cake


Nancy and Karen are visiting me and I wanted to make a coffee cake for brunch.  While gathering the ingredients, I found that there was very little brown sugar in the pantry.  As you are probably aware, I live out in the country so I had to change the recipe that was planned.
But, I had enough brown sugar to make this coffee cake with a little bit of crumb topping.  It turned out delicious.  So the next time things do not go as planned, branch out and try something different. It might turn out great!


Cake Batter

1/2 cup Oil
2 Eggs
1 cup of Milk
3 cups of Flour
1/2 cups of Sugar
4 teaspoons of Baking Powder
1/2 teaspoon of Salt

Grease and flour a 13" X 9" oven proof baking dish.  Set aside.
Whisk oil, eggs, and milk together in a large bowl.  Set aside.
Sift dry ingredients together and then combine into liquid ingredients; mixing only until all of the dry ingredients have been moistened.  Dollop the batter around the prepared pan and then spread with a spatula.  Make crumb topping.

Crumb Topping

1/2 cup Brown Sugar
2 Tablespoons of Flour
2 teaspoons of Cinnamon
2 Tablespoons of Melted Butter

Mix the brown sugar, flour, and cinnamon together with a fork.  Pour melted butter over and continue mixing until moistened. 

Crumble on top of the batter and bake at 375 degrees for 25 minutes or until a cake tester comes out clean. 
Serve warm with butter and whipped cream.
