Slow Cooker Pork and Pepper Stew

This is a great slow cooker meal.  Add a little steamed rice and you have a wonderful autumn meal.

1 1/2 to 2 pounds of Pork Roast, cubed
1/4 cup Flour
1 cup Water
2 Tablespoons Ground Cumin
1 teaspoon Chili Powder
1 teaspoon Oregano
1 teaspoon Garlic Powder
1 large Sweet Onion, halved and then thinly sliced
2 4.5 ounce cans of Chopped Green Chiles
1 12 ounce jar of Roasted Red Peppers, roughly chopped

Using a 3 1/2 quart electric slow cooker, toss the pork and flour until pork is coated.  Reserve 1 can of chopped green chiles and 1/2 of the chopped Roasted Red Pepper.  Stir in the rest of the ingredients, mixing well.
Cover and cook on low heat for 6 hours or until pork is tender, stirring occasionally, if possible.
Stir in remaining peppers and cook an additional 30 minutes.

It is nice to come home and have dinner almost complete, isn't it?
