Ann Vinson's Crazy Microwave Corn on the Cob with Mexican Style Spread

When Ann told me how to cook corn in the microwave, I thought that I had misunderstood.  In a way, I guess I did.  I understood her to say that the kernels fall out of the cob after cooking.  That part was not correct.  The taste and ease of preparing corn was correct.  Ann was right, this is wonderful!  I added a delicious, Mexican style spread to complement the flavors of the the corn.  The entire process took me 10 minutes.  No Kidding!



2 whole ears of Corn, still in the shucks
1/4 cup of Butter or Margarine, melted
1/4 cup of Dukes Mayonnaise
1-3 teaspoons of Lime Juice
1/2 teaspoon of Garlic Powder
Chili Powder, Salt, and Pepper to taste

Place a layer of paper towels on the turntable in the microwave.  Lay the 2 ears of corn on top.  Microwave on high for 8 minutes.  Using an oven mitt, remove the ears of corn from the microwave.  On a cutting board, cut off the butt end of the corn where the shucks attach.  Using an oven mitt, hold the corn upright by the top and shake onto a plate.  The corn will slide out onto the plate, leaving the shucks and silks in your hand. Let the corn cool a little before eating.  It will be very HOT!


Spread

Combine the butter, mayonnaise, lime juice (small amount at a time, to taste), and garlic powder in a bowl.  Mix until smooth.  Spread on corn and sprinkle with chili powder, salt, and pepper to taste.

  1. YUM! I love corn and microwave cooking. It only makes sense to put them together. I have never seen this recipe but with corn on sale everywhere, I plan to do this soon.
