Blender Banana Bread
This is the time of year to buy Bananas, especially if family members are outside in the heat, for any length of time. If you are like me, you probably buy a few too many. Once the bananas start to go south, you can make a variety of delicious dishes. Today I made Blender Banana Bread. You are going to be surprised how easy this recipe is. Use a blender to combine the wet ingredients. Then sift the dry ingredients and mix together.
This recipe makes 1 large loaf of bread or 2 small loaves. A larger loaf will require about 10 minutes of additional cooking. Cover with foil the last 15 minutes or so to keep the top from burning. If you make 2 small loaves, you have one to give to a friend or freeze for later and 1 to enjoy now. If you are planning to freeze 1 loaf, let the bread cool thoroughly, wrap tightly in several layers of plastic wrap to seal out air, then wrap in foil, then wrap in plastic wrap, again. Put the loaf in a plastic freezer bag. It will last this way for 2 months. The reason for all of the layers is to keep a freezer taste off of the bread.
Preheat the oven to 350 degrees for either size loaves.
5 medium Bananas, chunked
1/2 cup of Vegetable Oil
1 cup of Sugar
2 Eggs
zest of 1 Lemon
2 cups of Flour
1 1/2 teaspoons of Baking Powder
1/2 teaspoon of Baking Soda
1/2 teaspoon of Salt
1/2 teaspoon of Ground Cinnamon
1/8 teaspoon of Ground Allspice
Spray 1 large loaf pan or 2 small loaf pans with vegetables oil spray and set aside.
In a blender, combine bananas, lemon zest, and oil. Blended on high until smooth. Add sugar, 1/4 cup at a time, blending after each addition. Add eggs, blend until combined.
In a large bowl, sift all dry ingredients together. Make a well in the middle. Add liquid to dry. Mix until all dry ingredients have been coated. Batter may be a little lumpy.
Divide batter between the 2 pans or pour into 1 pan. Bake 2 loaves for 50-55 minutes or 1 loaf for 60-65 minutes; until a cake tester comes out clean. Let the bread cool some before eating.
