Banana Cake with Sour Cream Icing
This is a very moist, delicious sheet cake. It is easy to prepare and wonderful to enjoy. In fact, you probably have all of the ingredients at hand. It starts with a Yellow Cake mix. I used Pillsbury because that is what I had in the pantry. I try to purchase Pillsbury or Duncan Hines mixes. Both brands tend to turn out better, for me, than other brands. I used walnuts but any type of nut could be substituted or just deleted. If you like a more subtle amount of nutmeg, it can be reduced, but unless you have an allergy to it, (yes, I have a friend with a horrible nutmeg allergy), I would not totally eliminate the nutmeg.
It takes a little longer than normal because once the cake is completely cooked, you will need to broil the topping for a few minutes. I stay with the cake while broiling the topping. Leaving the door open to watch the process helps to insure that the nuts will not burn. The topping needs to start to bubble around the edges.
Preheat oven to 350 degrees. Grease and flour a 13" X 9" oven proof pan, set aside.
1 Yellow Cake Mix
1 cup Milk
3 Eggs
1/3 oil
1 1/2 cups Mashed Bananas
1 3/4 cups of Chopped Walnuts, divided
1/4-3/4 teaspoons of Ground Nutmeg
1 1/2 cups of Sour Cream
1/2 cup of Brown Sugar
1. Mix together milk, eggs, bananas, and nutmeg in a large mixing bowl. Combine thoroughly.
2. Before adding cake mix, use about 1 Tablespoon of cake mix to coat 1 cup of walnuts. Add the rest of the cake mix. Using an electric mixer, beat on high for 2 minutes. Add coated walnuts. Stir by hand.
3. Pour batter into prepared pan. Bake at 350 degrees for 30-40 minutes or until cake is completely cooked.
4. Once the cake is cooked, remove from oven and turn on the broiler. In a small bowl mix sour cream and brown sugar. Spread the sour cream mixture on top of the hot cake. Sprinkle with remaining ( not coated with cake mix) 3/4 cup of walnuts.
5. Place cake under broiler for 5-7 minutes. Once the walnuts toast and the sour cream starts to bubble, remove from broiler. Allow cake to cool before serving.
