This recipe makes about 30 mini muffins and is great to take for potluck. Use real butter for these muffins. Margarine will not cut it in this recipe.
Remember to sift flour, even if you think you can skip it. It really helps to make the texture better.
1/2 cup Butter, softened
1/2 cup Sugar
1 Egg
2 cups sifted All-Purpose Flour
4 teaspoons Baking Powder
1 teaspoon Salt
1/2 teaspoon Nutmeg
1 teaspoon Vanilla
1 cup Milk
1/2 cup Butter, melted
3/4 cup Sugar
2 teaspoons Cinnamon
Cream 1/4 cup butter and 1/2 cup sugar until light and fluffy. Beat in egg and vanilla. Sift together flour, baking powder, salt and nutmeg. Add to creamed mixture alternately with milk, beating after each addition. Fill small greased 2 inch muffin tins 2/3 full. Bake at 375 degrees for about 15 minutes. Mix together 3/4 cup Sugar and 2 teaspoons Cinnamon. While hot, roll muffins in 1/2 cup melted butter and then roll in Cinnamon and Sugar mixture.
