As everyone is probably aware, Texas has not had rain in so long that our trees are starting to die. Tonight, we have a chance for some rain. So it may be time to break out the ice cream freezer and make hurricanes.
In a large 1 gallon pitcher, combine 1 can of pineapple juice and 1 carton of orange juice, 1/4 cup of grenadine, 2 cups of rum, 1 cup of brandy and 1 cup of amaretto. Mix well and pour into a clean 5 quart ice cream freezer mixing bowl up to the fill line. Insert the paddle and cover with the lid. Put into the outside bucket. Pack with ice and rock salt starting with a layer of ice. Put the entire contraption on the porch or where ever you normally make your ice cream. Plug in the cord and let it mix for 2 to 3 hours. It will not totally freeze but the edges with start to get thick and icy. When the icy edge gets to about 2 inches thick, the Hurricanes are ready. Take the mixing bowl out and remove the lid and paddle. Mix to distribute the thicker ice with the thinner ice. Ladle into Hurricane glasses and serve. Put the excess into the refrigerator's freezer. (If there is any excess.)

This is YUMMY. Need to make them more often --it rained a little. Maybe making the hurricanes is the secret! ;)
