Lamb Burgers

If you have not tried lamb before, this is an wonderful way to have a taste without the investment of a leg of lamb or a rack of lamb. Lamb has its own distinct flavor, but is very good. You will need to heat the grill or griddle for this one.  These were cooked over mesquite, which adds a tangy flavor.  Grill the onions, also.  It adds additional flavor to the burger.



1 pound of Ground Lamb
zest of one Lemon
1 teaspoon of Garlic Powder
4 ounces of Crumbled Feta Cheese
salt and pepper
1 Sweet Onion, sliced about 1/4 inch thick
4 Hamburger Buns
Washed Iceberg Lettuce Leaves
Fresh sliced Tomatoes

Combine Lamb, Lemon zest, Garlic powder, Feta, and salt and pepper.  Shape into 4 equal patties.
Cover and refrigerate.  (Wash your hands, thoroughly) Slice Onion and set aside.   Arrange Lettuce and Tomatoes, Cover and refrigerate.
If you are using a griddle, heat the griddle and cook the onions and then the Lamb.  If using the grill, put the wood on one side and light the grill and stay outside with it.  Do not leave it unattended.  Once the fire burns down and the wood turns white, get the Lamb patties and put them on the side opposite of the coals.  Place the sliced onion on the same side as the lamb but away from the meat. Give each piece room to cook.
Cook the Lamb thoroughly. The onion will cook quicker than the meat.  Serve with Hamburger Buns, Lettuce and Tomatoes. 
PLEASE BE VERY CAREFUL USING THE GRILL.  THE WOOD OR CHARCOAL IS VERY HOT AND CAN CAUSE VERY BAD BURNS.
