This is so easy and I have never met anyone who does not love it. It has 3 ingredients takes just a few minutes to prepare and not many more to cook. Plus, it is a wonderful dish for autumn.
1 pound of Smoked Sausage, sliced
1 Onion, sliced
1 Green Bell Pepper, sliced
Lightly spray a large skillet with vegetable spray. Turn heat to medium and add sausage. Brown sausage and remove. Leave the drippings in the pan and reduce heat to low-medium. Add onions and green bell pepper. Cook until caramelized. Add sausage back into skillet and reheat. This allows the flavors of the vegetables to combine with the sausage.

This was a mainstay for my young family as my children were growing up. We always served it with rice. Ummmmm..think I'll make it tonight for my grand children.
