Sweet and Sour Mustard Greens

This is a very easy and delicious way to prepare Mustard Greens, which happen to be very inexpensive. You could use any kind of greens.  I would not recommend using baby spinach.  It is very delicate and would not hold up to the cooking process.
You will need to thoroughly wash the greens. Remove the hard stems and any damaged leaves.  Cut into small pieces.



1 pound of Mustard Greens or other Greens
6 cups water
Large Bowl of ice water
2 slices of Bacon
4 Tablespoons of Corn Starch
3/4 cup of Hot Water
2 Tablespoons Sugar
2 Tablespoons Vinegar
1 teaspoon salt
pepper to taste

In a large pot, bring 6 cups of water to boil, blanch the Mustard Greens just until turning bright green and then plunge quickly into ice water to stop the cooking process.  (Reserve the water that the Mustard Greens were blanched in to use for the sauce). Remove Mustard Greens from ice bath and drain in a colander. Set aside.
In a large skillet, cook bacon until crisp.  Remove bacon and set aside, leaving the drippings in the skillet.  Blend Corn Starch into the drippings.  Add 3/4 Cup of Hot Water: stir and cook until thickened and bubbly.  Stir in Sugar, Vinegar, Salt and Pepper.  Add drained Mustard Greens and cook until heated through.  Garnish with the bacon, if it is still available.  As you notice in the photo, it was no longer available to be added to the dish.

Yummy, easy, quick and delicious! What more could you ask for?
