If you are in a cafe in Central Texas and you hear those words, the first thing that you think is that you need a translator. The server is asking if you would like the tea you have ordered sweetened or unsweetened. What you should be thinking is that you are in for some great tea. In fact, you may think you do not need to order anything else, once you have tasted it. (I am allowed to make fun of the way Central Texans speak, I sound just like that.) Just so you know, you will be receiving Iced Tea, not Hot Tea. There is a perfect recipe for iced tea. It starts with the tea. For Iced Tea, purchase Luzianne brand tea and only use glass or a porcelain lined container for heating the water. Heating water in a metal pan gives the tea a metallic taste. I use the microwave and a microwave safe measuring cup to heat the water.
If you are questioning my saneness for discussing how to make tea on a blog, you have to realize that I love a good glass of iced tea and a good cup of hot tea.
To make 2 quarts of Iced Tea with Tea Bags
2 Family size Luzianne tea bags
4 Cups of Boiling Water
3/4 Cup of Sugar
4 Cups of Cool Water, not from the dispenser on the refrigerator
In a 2 Quart pitcher, place 2 tea bags and tie them together on the handle. Put Sugar in the pitcher and add 1 cup of cool water. Pour the Boiling Water into the pitcher, being careful not burn yourself with the boiling water. Make sure that the tea bags are in the hot water. Steep for 5 minutes and remove the the tea bags. Stir to make sure the sugar gets dissolved. Add 3 more cups of cool water. Pour over ice in a lovely glass and go sit on the porch.
If you are using loose leaf tea, use 1/4 cup of tea. Put it in a separate heat proof container, pour boiling water over the loose tea and let it steep for 5 minutes. Put sugar in a pitcher and using a fine strainer, strain tea tincture into the pitcher. Stir and add 4 cups of cool water. Pour, serve and enjoy!
