Pork and Lettuce Wraps


This is an easy and quick meal.  I used ground pork but any type of ground meat works well.

1 pound of Ground Pork
1 Tablespoon of Vegetable Oil
1 small sweet Red Pepper, seeded and thinly sliced
1 small Onion, halved and thinly sliced
2 Tablespoons Ground Ginger
1 Tablespoon Garlic Powder
1/2 teaspoon of Ground Red Pepper
3 Tablespoons light Soy Sauce
1 Tablespoon Sesame Oil
8 Large Lettuce leaves
1 medium Cucumber, peeled and thinly sliced
1 cup of Cilantro Leaves, washed
1 cup of Mint Leaves, washed
1 Lime, cut into wedges

In a large skillet, heat oil over medium heat-high heat.  Crumble in pork and cook until there is no longer any pink in the meat.  Add sweet pepper, onion, ginger, garlic, and ground red pepper.  Cook until sweet red pepper starts to turn tender but is still a little crisp.  Remove from heat and add soy sauce and sesame oil.
To serve, put lettuce, cucumber, mint and cilantro on a platter.  Place 1/2 cup of meat mixture in the lettuce leaves, top with cucumber, mint and cilantro. Squeeze lime over it, roll it up and Enjoy!
