I use my slow cooker a lot, especially in the autumn. This is a delicious recipe that can also be prepared in a skillet with a combination of stove top and oven. It turns out great every time I cook it. Serve it with rice or noodle on the side for a complete meal.
2 medium Onions,sliced
2 Garlic cloves, smashed
1/2 cup of Rice wine vinegar
1/2 cup of Low Sodium Soy Sauce
2 Tablespoons of Brown Sugar
1 can of Pineapple chunks, separated from juice and juice reserved
1 Bay leaf
Black Pepper
1 1/2 to 2 pounds of bone-in, skinless Chicken
2 teaspoons Paprika
2 small heads of Bok Choy, roughly chopped
In a 5 to 6 Quart slow cooker, combine onion, garlic, vinegar, brown sugar, Pineapple juice, bay leaf and a dash of pepper. Place the chicken on top and sprinkle with paprika.
Cook covered, on low, 7-8 hours or high 4 to 5 hours or until chicken is tender.
15 minutes before serving turn the temperature to high if it is not already on high. Add bok choy and pineapple chunks and cook covered 5 to 10 minutes.
