Oat Flour Blueberry Muffins

Oatflour Blueberry Muffins
If you follow this blog, you have probably noticed that my family likes berries.  I brave the chiggers to pick Dewberries in the spring.  I go to the Farmer's Market for fresh local Strawberries and Blueberries.  In the winter, I purchase berries, fresh and frozen, after emptying my freezer of the berries I have frozen.  We love berries. 
This recipe uses oat flour as one of the ingredients.  It is very easy to make if you have an electric food processor.  To make the flour for this recipe, use the metal chopping blade and process 1 1/4 cup of Old Fashion Oats until it turns to flour.  It takes about 3 minutes on the dough setting in my food processor. 
Pre-heat oven to 400 degrees.

1 1/4 cups of Old Fashioned Oats, processed into flour and divided
1 cup of all purpose Flour
1 Tablespoon Baking Powder
1/2 teaspoon of Salt
1/2 cup of Sugar
3/4 cup of Milk
1/3 cup of Sour Cream
1 Egg
1/2 cup of fresh or frozen Blueberries
1/4 cup of Sugar
1 Tablespoon of Butter

Grease and flour a 12 cup muffin tin and set aside.
Mix together 1 cup of Oat flour, all purpose flour, baking powder, salt and 1/2 cup of Sugar.  Make a well in the middle.  In a separate bowl, mix together, milk, sour cream, and egg until thoroughly blended.  Pour in the well in the oat mixture and combine until all ingredients are just combined. Do not over mix. Toss blueberries with  2 Tablespoons of oat flour and carefully fold into batter.  Spoon into prepared muffin tin, dividing evenly.
Mix together the rest of the oat flour and1/4 cup of sugar.  Cut butter into it until crumbles are form. Sprinkle on top of the the muffins.  Place in oven and bake at 400 degrees for 20 to 25 minutes or until muffin are done.  Place muffin tin on a wire rake to cool for about 5 minutes before removing muffins from tin.
