Cherry Fizz

Yea! It is Champagne Saturday!  I thought that a cocktail with Sparkling Wine would be perfect since we skipped spring here, in Texas, and went right into summer. It is very easy and delicious.  I used an Extra Dry Cava, but any type of Sparkling Wine will make a great cocktail.

1 bottle of Sparkling Wine
Sugar
Cherries
Cherry Juice
Bitters

For each glass: Coat the rim with cherry juice and then dip in sugar.  At the bottom of the glass, put 1/2 teaspoon of sugar, 1 teaspoon of cherry juice, 3 dashes of bitters, and then top with 2 to 3 cherries.  Carefully pour in sparkling wine to top off the glass. Yum! I think it is time to go sit on the back porch and enjoy my Cherry Fizz.
