Country Style Pork Ribs are very meaty. These are cut from the same muscle area that rib chops are from. When cutting chops, the meat cutter will slice the chops against the grain which appears flat. Once no other chops that can be properly cut, a smaller piece of the muscle is left. It is oddly shaped, so instead of slicing it against the grain, it is laid on the flat side that the chops were cut from, and slice with the grain. This is usually a much less expensive cut, but it is just as delicious.
These can be cooked on the grill but I like to throw them in the slow cooker. That way dinner is ready when everyone is returns home in the evening.
2 pounds of Country Style Pork Ribs
Salt, Pepper and Garlic Powder
3 Tablespoons each of Barbecue Sauce, Mustard, Worcestershire Sauce
1/2 teaspoon of ground Cumin
Place the ribs in the crock of the slow cooker. Turn the heat on to either low or high, depending on how long you plan to cook the ribs. Season liberally with salt, pepper, and garlic powder. Slow cooking requires additional seasoning. Put the rest of the ingredients on top of the ribs. With a spoon, mix the sauces and cumin together and spread on the tops and sides of the ribs. Cook on low for 6-8 hours and on high for 4-5 hours. These should be very tender when cooking is complete.
