Ham Biscuits~A delicious way to use that leftover ham!

Need a way to use the leftover ham from Easter? This is a great little brunch biscuit and goes with everything.
Preheat the oven to 450 degrees.

3 Tablespoons of Margarine
1/2 cup of Ham, minced
1/4 cup of Shredded Cheddar Cheese
1 teaspoon of Mustard
2 cups of Flour
2 teaspoons of Baking Powder
1/2 teaspoon of Salt
4 Tablespoons of Shortening
2/3 cup of milk
Flour for rolling dough
Milk for Biscuit tops

Place margarine in an ovenproof baking pan that has sides on it.  Do not use a flat cookie sheet.  Place pan with margarine in the oven while it is preheating.  Once the margarine melts, remove the pan from the oven and carefully tilt the pan allowing the margarine to coat the bottom of the pan.  Set aside.
Mix ham, cheese and mustard together and set aside.
In a mixing bowl, sift flour, baking powder, and salt together.  Cut in shortening until the flour resembles peas.  Slowly add milk and toss with a fork until a soft dough forms. 
Turn dough out onto a floured pastry sheet, I use my tried and true Tupperware pastry sheet, and knead the dough 3 times.  Roll the dough out to 1/4 inch thick. Using a floured 2 inch cookie cutter, cut out biscuits. 
Using 1/2 of the biscuits, flip each one, on both sides,  in the melted margarine. Then top with about 1 teaspoon of ham mixture.  Dampen the edges of the bottom biscuits and top the other half of the biscuits. Press edges together and seal.  Brush the tops with milk and bake at 450 degrees for 12 minutes.  Remove from pan and let cool a few minutes before serving, as the cheese will be hot! Makes 10 to 12 biscuits.
