My Ultimate Toasted Cheese Sandwich

A toasted cheese sandwich was one of my favorite meals, as a kid.  Over the years, my sister and I experimented with what would make this sandwich even better.  This is the final result.  First, do not
grill the sandwich in a pan.  Toast it in the oven. Second, use Cheddar Cheese,  "Rat" cheese, if you can find it. That is the big wheel of cheese that someone has to cut into a wedge and wrap in butcher paper. Third, use vine ripened tomatoes. Yummy!

Preheat oven to 350 degrees.

Cheddar Cheese
Mayonnaise
Tomato Slices
Sweet Pickles or Sweet Pickle Relish
White Bread

Spread inside of bread slices with mayonnaise, top with cheese and then tomato slices.  Place open faced on a baking pan and bake until desired brownness on the bottom sides of the bread.  Remove and top with sweet pickle slices or relish.
