Eggs and Peppers


This is Chris's idea and it turned out wonderful!  We had it for dinner one evening because it was fast. And I had not been to the grocery store, It was one of those "let's see what is in the pantry" meals,
 It does take a few minutes to blanch the peppers, but you do not want to get the pepper too soft.   You can skip the blanching totally if you like baked peppers a little on the crunchy side.  I like either style, but of the two, I prefer to have blanched the pepper prior to baking.
You could add anything you like to eggs, I just had a small amount of bacon, ham, green onions. (See above~HeHe) This would make a nice vegetarian meal by adding some sauteed squash, seeded tomatoes, and onions.. Consider making more than usual, these were so good, that I wished that I had made a double batch!



Preheat oven to 350 degrees.

For each person:;

1 medium Bell Pepper
2 Eggs
2 slices of cooked Bacon
1/4 cup of diced Ham
1/2 Green Onion, chopped (reserve a small amount of the leaves for garnish)
Salt and Pepper
Pimente" Dulce for garnish   (I know it says sweet but it is not. It is just lightly hot.)

Wash and set pepper on a flat surface. Cut top off parallel to the the surface.  This will allow the pepper to stand upright.  Do not cut the bottom of the pepper. That will cause the eggs to leak out.  Remove the seeds and ribs, discard.  Remove the stem from the top and chop the rest of the pepper.  Discard the stem and place the chopped bell pepper in a labeled container for later use.
Use a large enough stock pot to hold all of the peppers that you cooking. Place the peppers in the pot and cover with water.  Season the water with the same amount of salt that you use to season pasta water.  This is your opportunity to season the peppers. Bring the water to a boil and cook the peppers just long enough  to change to color from bright green to a more dull green.  This will only take about 5 minutes.  All you are doing is barely cooking the peppers to help with the baking process. Place the peppers in an ovenproof baking pan.
Beat eggs and the rest of the  ingredients, except for garnishes, and pour into the bell peppers.  Mix the ingredients for each pepper individually.  It is easier for me to get an even amount for each pepper.  Bake at 350 degrees for 35 minutes.  Remove peppers to a serving dish and garnish.
