When I received my shipment of Sepay Groves Olive Oil and Vinegar, Peggy included some new recipes. This is my rendition of the recipes that she sent. If you can get garden or Farmer's Market produce by all means use that. Try this even if grocery store produce is all you can get. It is very refreshing on a hot summer day.
Chilled Tomato Soup
4 cups of Tomatoes, peeled and cut into wedges
2 cloves of Garlic, minced
1 teaspoon of dried Basil
1 cup of Onion, chopped
1 Tablespoon of Sepay Groves Olive Oil
1 1/2 cups of White Wine
1 Tablespoon of Sepay Groves Raspberry Champagne Vinegar
Fresh Cracked Black Pepper
Salt
Freshly grated Parmesan Cheese
Wash and peel tomatoes, trying to reserve as much of the liquid as possible. Set aside.
Place olive oil in a large stock pot and heat over medium heat. Add onion and saute until just starting to brown. Add garlic, basil, tomatoes and white wine. Cover and simmer until the tomatoes start to fall apart, about 15 minutes. Remove from heat and stir in vinegar and cracked black pepper. Taste and add salt if needed. Chill for 4 hours or until cold. Serve with a sprinkle of freshly grated Parmesan Cheese.
Peach Salad
1 cup of Onions, diced
1 cup of Green Bell Pepper, diced
1 cup of Cucumber, diced
1 cup of fresh Peaches, peeled and diced
1 1/2 Tablespoons of Sepay Groves Raspberry Champagne Vinegar
1 teaspoon of Sugar
1/2 teaspoon of Salt
Put onions, bell pepper, and cucumber in a bowl. Put peaches on top of vegetables and sprinkle peaches with the vinegar. This will keep the peaches from turning brown. Mix sugar and salt together and sprinkle over salad. Toss and chill until cold. This gets better the longer it sits in the refrigerator.
Parmesan Toast
6 slices of French Bread
Sepay Groves Olive Oil
freshly grated Parmesan Cheese
Brush one side of each slice of bread with olive oil, sprinkle with cheese and bake on a pizza stone at 350 degrees for about 7 minutes or until lightly toasted.
