Stuffed Potato Soup

 This is a wonderful and easy autumn treat.  Add some cornbread and you will have a lovely meal.
Peel and cube 3 cups of potatoes.  In a large stock pot, cook 2 pieces of bacon.  Remove the bacon and reserve for garnish later. Add the potatoes and almost cover with water. Bring to a boil, lower heat and cook potatoes until tender.   Once the potatoes are tender when testing with a fork.  Add 1/2 cup of butter or margarine and 2 cups of milk. Cook about 20 minutes.  Stir in 1 cup of shredded Cheese and 4 ounces of Sour Cream. Remove from heat and garnish with reserved bacon.
