Strawberry Peach Quick Bread

This is a quick and easy way to use up the rest of your peaches before they spoil.  You can make this bread without the peaches, but then you have to ask yourself, "Why"?  It makes 3 mini loves.  You can use different size loaf pans, just remember to adjust the the cooking time.  All are baked at 350 degrees.  Just test with a cake tester or a toothpick to make sure that the bread is completely done and the tester or toothpick comes out clean. For the mini loaves, the cook time is 40 to50 minutes.
This makes about 18 1inch slices and serves 8 to 12 people but in reality it may make 6 slices and serve 2 people. And yes, it really is that delicious.

3 cups of All-Purpose Flour
1 1/2 cup of Sugar
1 Tablespoon Baking Powder
1 teaspoon salt
1/4 teaspoon Baking Soda
10 ounce container of Frozen, Sweetened Strawberries thawed with the juice
4 medium Peaches, pitted, peeled and chopped
1 beaten Egg
4 ounces of Sour Cream
1/4 cup of Milk
oil and flour for pans

Oil and flour 3 6 1/2" X 2 3/4" mini loaf pans. Set Aside.
Measure and sift together flour, sugar, baking powder, salt and baking soda.  Make a well in the middle and set aside.
Mix together the strawberries with the juice, peaches, egg, and sour cream.  Add to flour mixture in the well and combine. Add milk and mix. Mix thoroughly but try not to use any more strokes than necessary.
Put into prepared loaf pans.  The batter will be stiff.
Bake at 350 degrees for 40 to 50 minutes or until tester comes out clean.
Let cool and serve with butter.

*a note about flour-Purchase the finest flour that you can afford. The cost difference between a store brand and a name brand is very slight but it makes all the difference in a finished product.

Enjoy with a nice cup of coffee or tea.
