Bacon Mac and Cheese

This is a 30 minute meal.  It is one my children love.  My mother made a version of this when I was a kid.  This recipe is one that has developed over time and is always delicious. Serve it with a salad and bread with butter. It is great on a cool autumn evening.

1 pound of Macaroni
1/2 pound of Bacon, chopped
1 medium onion, chopped
1 can of diced Tomatoes
4 ounces of cheddar cheese, cut into small cubes
salt and pepper to taste

In a large stock pot, 8 cups of heavily salted water to boil.
While you are waiting on the water to boil, cook bacon over medium heat in a large skillet.  Remove bacon and leave the renderings in the skillet.  Add onion and cook until lightly caramelized.  Add tomatoes and using the can as a measuring cup, add 1/2 can of water. Cover and reduce heat to low. Simmer.
When the water comes to a boil, add macaroni.  Only cook it for 5 minutes.  Remove macaroni and put into tomato mixture,  reserving the water.  Bring back to a simmer, add bacon back into skillet and cook until macaroni is al dente, using pasta water,as needed, to keep from scorching. Remove from heat and add the cheddar cheese cubes.  Replace the lid so that the cheese just starts to melt.  Serve from the skillet.
