This is a nice coffee cake to serve warm with whipped butter. If I am sharing this cake, I bake it in two 8 inch pans. Preheat the oven to 375 degrees.
2 cups of sifted All purpose Flour
1/2 cup of Oatmeal
2 cups of Brown Sugar
1 teaspoon of salt
2/3 cup of Shortening
2 teaspoons of Baking Powder
1/2 teaspoon of Baking Soda
1 Tablespoon of Cinnamon
1 teaspoon of nutmeg
1 cup of Sour milk (1 teaspoon of vinegar added to 1 cup of milk, let sit for 5 minutes to curdle)
2 beaten Eggs
Mix Flour, oatmeal, sugar, salt and shortening until crumbly; reserve 1 cup. To remaining crumbs, add baking powder, baking soda and spices; mix well. Add milk and eggs; mix well. Pour into a 13" X 9" X 2" greased pan; top with reserved crumbs. Bake at 375 degrees for 30 to 35 minutes or until cake tester comes out clean.
