Vegetable Patties

Okay, before you discount these little vegetable patties, try them.  I made them thicker than usual so that you could see the middle after cooking.  These are quick, easy and delicious.

Using the largest holes on a 4 sided grater, grate 2 medium zucchini squash.
Using the small holes on the grater, grate 1 medium onion.
Finely chop 1/2 of a medium bell pepper. 
Lightly toss the vegetables together with 1/2 teaspoon of salt, 1/2 teaspoon of pepper  and 1 teaspoon of Italian seasoning.  To that add, 1/2 cup of flour, 1/4 cup of plain bread crumbs and 1 egg.  Mix thoroughly.
Heat 1 inch of shortening or oil in a skillet to 250 degrees.  Shape the vegetables patties into 3 inch balls and then flatten to about 1/2 to 3/4 inches thick.  Carefully place in the hot shortening or oil being sure not to crowd the patties.  Cook until golden brown and serve with Ranch Dressing.  These are crispy outside and tender inside.
