Egg Casserole with Sausage and Vegetables

Happy Father's Day!  This is a hearty egg casserole that will satisfy everyone in the family.  It has layers of vegetables, sausage and eggs.  And it makes a beautiful presentation on a buffet. This takes a little more work than a classic egg casserole because the sausage is rendered and the onion is caramelized but the flavor makes the extra time worth the effort.


Preheat the oven to 400 degrees.

6 Eggs
2 Tablespoons of Sour Cream
1 medium Green Bell Pepper, coarsely chopped
1/2 cup of Onion, coarsely chopped
1/2 cup of chopped Sun Dried Tomatoes
1/2 pound of sliced Smoked Sausage (I used  Beef Sausage)
1 teaspoon of Salt
Cracked Black Pepper
1 cup of Shredded Mozzarella Cheese

In a large bowl, combine eggs, sour cream, salt and black pepper.  Using a whisk, combine thoroughly and set aside.
Over low heat, render the sausage and then remove the sausage from pan, saving the drippings.  Caramelize the onions in the dripping and remove.

To assemble, grease an 8" X 8" oven proof dish.  Layer the bell peppers and pour 1/2 of the egg mixture over the bell peppers.  Combine the onion and tomatoes and layer those over the bell pepper and egg.  Cover the rest of the egg mixture and arrange the sausage on top.  Cover with the mozzarella cheese.  Place in the oven and bake at 400 degrees for 10 minutes.  Lower heat to 350 degrees and bake for 30 minutes.  Let cool before serving.
